Estas press\u00f5es ambientais, bem como a evolu\u00e7\u00e3o social das expectativas dos consumidores, exigem que os viticultores, viticultores e en\u00f3logos se adaptem de uma forma multidisciplinar a fim de fornecer respostas cada vez mais complexas.<\/p>\n\t<p><strong>A redu\u00e7\u00e3o do balan\u00e7o h\u00eddrico<\/strong> de quase 200mm em 60 anos (dados: Saint-Emilion - ver imagem) demonstra <strong>aumento da seca<\/strong> no ver\u00e3o.<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Bilan-hydrique-PT.png\" alt=\"figura1-po\" itemprop=\"image\" height=\"606\" width=\"979\" title=\"figura1-po\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Evolu\u00e7\u00e3o do balan\u00e7o h\u00eddrico clim\u00e1tico de 1952 a 2012, modelando o balan\u00e7o h\u00eddrico clim\u00e1tico calculado entre 1 de Abril e 30 de Setembro para a regi\u00e3o de Saint-Emilion. Balan\u00e7o h\u00eddrico calculado a partir de Lebon et al. 2003; parametriza\u00e7\u00e3o: RU = 0 mm e sem regula\u00e7\u00e3o estomacal).<\/p>\n\t<p>Como resultado das <strong>temperaturas mais elevadas<\/strong>, as videiras desenvolvem-se mais <strong>cedo<\/strong> e as datas de vindima s\u00e3o consequentemente <strong>antecipadas<\/strong>.<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2021\/04\/figure2-po.jpg\" alt=\"figura2-po\" itemprop=\"image\" height=\"606\" width=\"979\" title=\"figura2-po\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Evolu\u00e7\u00e3o das datas de vindima em Ch\u00e2teauneuf du Pape entre 1945 e 2013. Fonte: ONERC 2014.<\/p>\n\t<p>O <strong>aumento do n\u00famero de acidentes clim\u00e1ticos<\/strong> (chuvas fortes na primavera, muito calor e stress h\u00eddrico no ver\u00e3o) <strong>afeta a composi\u00e7\u00e3o f\u00edsico-qu\u00edmica das uvas<\/strong> (polifen\u00f3is e precursores arom\u00e1ticos, matura\u00e7\u00e3o heterog\u00e9nea, amargor ou desequil\u00edbrio estrutural) que <strong>se reflete nos vinhos<\/strong> (dureza, amargura, instabilidade de cor ou mascaramento de intensidade arom\u00e1tica).<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2023\/12\/figure3-po.jpg\" alt=\"figura3-po\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"figura3-po\" onerror=\"this.style.display='none'\"  \/>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Desequilibre-degre-acidite-PT.png\" alt=\"figura4-po\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"figura4-po\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Evolu\u00e7\u00e3o do teor alco\u00f3lico estimado, acidez e pH do mosto de uva nas vinhas do Languedoc entre 1984 e 2013.<\/p>\n\t<p>Os vinhos vinificados <strong>s\u00e3o cada vez menos equilibrados.<\/strong>Com efeito, verifica-se um <strong>aumento do grau potencial de \u00e1lcool<\/strong> potencial e pH com um <strong>redu\u00e7\u00e3o da acidez<\/strong> (dados: Languedoc - ver imagem).<\/p>\n\t\t\t<h2>Os resultados de 5 anos de investiga\u00e7\u00e3o<\/h2>\t\t\t\n\t\t\t\t<p>Uma das primeiras alavancas para responder \u00e0s expectativas enol\u00f3gicas ou de mercado est\u00e1 na vinha. Esta observa\u00e7\u00e3o levou \u00e0 implementa\u00e7\u00e3o de um estudo em 2014 e durante o curso do <strong>5 anos de colheitas<\/strong> dos seguintes. A avalia\u00e7\u00e3o de diferentes protocolos na vinha e na adega com base na nutri\u00e7\u00e3o org\u00e2nica rica em amino\u00e1cidos permitiu obter resultados significativos de um ponto de vista anal\u00edtico e sensorial.<\/p>\n\t<a href=\"https:\/\/oenoterris.com\/pt\/os-programas\/\" target=\"_self\" role=\"button\" aria-label=\"Descubra os nossos programas\" rel=\"noopener\">\n\t\t\t\t\t\tDescubra os nossos programas\n\t\t\t\t\t<\/a>\n\t\t\t\t<img decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/levier_vigne_PT_couleur.png.jpg\" alt=\"alavanca da vinha\" title=\"alavanca da vinha\" itemprop=\"image\"\/>\n\t\t<h3>A resposta no vinhedo<\/h3>\t\t\t\n\t\t\t\t<p>Uma das primeiras ac\u00e7\u00f5es agro-enol\u00f3gicas \u00e9 a nutri\u00e7\u00e3o da videira. Afecta os efeitos do cultivo e do clima e, juntamente com o regime da \u00e1gua, \u00e9 um dos factores importantes e determinantes no equil\u00edbrio dos rendimentos, a constitui\u00e7\u00e3o dos bagos, a composi\u00e7\u00e3o dos mostos e, finalmente, a qualidade e o perfil do vinho.<\/p>\n\t\t\t<h3>Programas de precis\u00e3o<\/h3>\t\t\t\n\t\t\t\t<p>Foi criado e aplicado um programa agron\u00f3mico de precis\u00e3o a uma parcela de Syrah localizada no lugar de Crest Petit (66), que re\u00fane as limita\u00e7\u00f5es clim\u00e1ticas e pedol\u00f3gicas a que esta casta \u00e9 sens\u00edvel. A parcela est\u00e1 dividida em duas partes: testemunha e programa de nutri\u00e7\u00e3o e estimula\u00e7\u00e3o (PNS).<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2021\/04\/crest-oenoterris.jpg\" alt=\"crest-oenoterris\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"crest-oenoterris\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Lote de Syrah Crest Petit - Posi\u00e7\u00e3o de declive Norte\/Sul - Solo de garrigue de calc\u00e1rio com afloramentos de baixa fertilidade, um solo de calc\u00e1rio esmagado com uma taxa muito baixa de terra fina, com um pH elevado (8,2) em risco de clorose f\u00e9rrica.<\/p>\n\t\t\t\t<a href=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Rendement-PT.png\" target=\"_self\" itemprop=\"url\" rel=\"noopener\">\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Rendement-PT.png\" alt=\"yield-oenoterris\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"yield-oenoterris\" onerror=\"this.style.display='none'\"  \/>\n\t\t\t\t<\/a>\n\t<p>Evolu\u00e7\u00e3o do rendimento em kg\/ha, nas parcelas Syrah Crest Petit testemunha e PNS, de 2011 a 2019 (colheita de 2019, zona PNS: + 35%; m\u00e9dia 2011-2019, zona PNS: + 22%)<\/p>\n\t\t\t<h3>Monitoriza\u00e7\u00e3o dos indicadores agron\u00f3micos<\/h3>\t\t\t\n\t\t\t\t<p>Desde 2011, as medi\u00e7\u00f5es agron\u00f3micas da produ\u00e7\u00e3o s\u00e3o feitas na vindima. Estas medi\u00e7\u00f5es s\u00e3o indicadores agron\u00f3micos para a produ\u00e7\u00e3o de ambas as partes da parcela: programa de controlo e nutri\u00e7\u00e3o e estimula\u00e7\u00e3o (NSP). Para a colheita de 2019, observa-se um aumento de rendimento m\u00e9dio de 35%. Estas vinifica\u00e7\u00f5es foram realizadas na cave experimental do campus enol\u00f3gico do Grupo Sofralab, localizado em Montagnac (34).<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2021\/04\/campus-montagnac.svg\" alt=\"campus-montagnac\" itemprop=\"image\" height=\"0\" width=\"0\" title=\"campus-montagnac\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Os resultados das an\u00e1lises dos mostos das parcelas de controlo e SNP mostraram que n\u00e3o houve diferen\u00e7a significativa nos par\u00e2metros qu\u00edmicos estudados (acidez vol\u00e1til, grau alco\u00f3lico, acidez total, pH), confirmando assim que as qualidades enol\u00f3gicas dos mostos s\u00e3o preservadas apesar do aumento do rendimento.<\/p>\n\t\t\t<h3>Resultados anal\u00edticos<\/h3>\t\t\t\n\t\t\t\t<p>A composi\u00e7\u00e3o de compostos vol\u00e1teis como os ti\u00f3is e \u00e9steres foi tamb\u00e9m analisada nos vinhos ap\u00f3s o engarrafamento. Os dois vinhos produzidos a partir dos mostos da parcela de PNS (vinifica\u00e7\u00e3o cl\u00e1ssica e vinifica\u00e7\u00e3o biol\u00f3gica) tinham concentra\u00e7\u00f5es m\u00e9dias de compostos vol\u00e1teis do tipo tiol mais elevadas do que as observadas no vinho da parcela de controlo. Este aumento \u00e9 ainda mais pronunciado entre o controlo e o vinho vinificado com a cepa de levedura reveladora de aromas.<\/p>\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Thiols-vins-PT.png\" alt=\"gr\u00e1fico1\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"gr\u00e1fico1\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Concentra\u00e7\u00f5es m\u00e9dias de compostos vol\u00e1teis do tipo tiol (ng\/l) nos vinhos ap\u00f3s o engarrafamento, observadas nos anos de colheita de 2015 a 2018.<\/p>\n\t\t\t\t<a href=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Radar-degust-PT.png\" target=\"_self\" itemprop=\"url\" rel=\"noopener\">\n\t\t\t\t<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/oenoterris.com\/wp-content\/uploads\/2022\/04\/Radar-degust-PT.png\" alt=\"gr\u00e1fico2\" itemprop=\"image\" height=\"682\" width=\"979\" title=\"gr\u00e1fico2\" onerror=\"this.style.display='none'\"  \/>\n\t\t\t\t<\/a>\n\t<p>Gr\u00e1fico em estrela das m\u00e9dias dos anos de colheita de 2015 a 2018 durante as degusta\u00e7\u00f5es das 3 modalidades: testemunha vinifica\u00e7\u00e3o cl\u00e1ssica, PNS + vinifica\u00e7\u00e3o cl\u00e1ssica e PNS + vinifica\u00e7\u00e3o biol\u00f3gica.<\/p>\n\t\t\t<h3>An\u00e1lise sensorial<\/h3>\t\t\t\n\t\t\t\t<p>Os resultados da degusta\u00e7\u00e3o mostram que os vinhos das parcelas do PNS s\u00e3o mais apreciados nas degusta\u00e7\u00f5es (pontua\u00e7\u00f5es globais mais elevadas). S\u00e3o notados como mais frutados, mais intensos e com um perfil de ti\u00f3is semelhante ao dos citrinos. Observa-se um fen\u00f3meno de sinergia entre o programa de nutri\u00e7\u00e3o de estimula\u00e7\u00e3o org\u00e2nica na vinha e a nutri\u00e7\u00e3o org\u00e2nica na adega.<\/p>\n\t\t\t<h4>Como nasceram os programas Oenoterris<\/h4>\t\t\t\n\t\t\t\t<p>Ap\u00f3s cinco colheitas de estudo, os resultados mostram uma sinergia entre um programa de nutri\u00e7\u00e3o\/estimula\u00e7\u00e3o na vinha e um programa org\u00e2nico no processo de vinifica\u00e7\u00e3o. Apesar dos efeitos da vindima sobre o mosto e as an\u00e1lises do vinho, os resultados organol\u00e9pticos mostram diferen\u00e7as significativas entre as diferentes modalidades e isto de forma reprodut\u00edvel ao longo das 5 vindimas estudadas.
